Paleo Pumpkin "Granola" Bars

I call these granola bars but there is actually no granola in them. These are paleo, gluten & dairy free and made with all natural ingredients! A good replacement for your processed/packaged granola bars. 


Paleo Pumpkin Granola Bars


  • ½ cup sliced almonds
  • 1 cup pumpkin seeds
  • 8-10 medjool dates, pits removed, then chopped
  • 1 cup pure pumpkin puree
  • 3 tbsp coconut oil, melted
  • ⅓ cup unsweetened shredded coconut
  • ¼ cup flax meal
  • ⅓ cup pure maple syrup
  • 1 tsp vanilla extract
  • 2 tbsp cinnamon
  • 1 tbsp nutmeg
  • ⅛ tsp ground cloves
  • ⅛ tsp ground ginger


  1. Preheat oven to 325 degrees and line 9x9 baking dish with parchment paper 
  2. In a large mixing bowl, mix your pumpkin puree, coconut oil, maple syrup, vanilla extract, and all spices
  3. Then add your nuts, seeds, flax and dates and mix well
  4. Pour in granola mixture into baking dish and use a spoon to spread out the mixture evenly
  5. Place in oven and cook for 30-40 minutes, until toothpick comes out clean
  6. LET COOL COMPLETELY (or they will fall apart!)
  7. Cut into bars or squares and enjoy!
