Things that make me happy: Peanut butter, chocolate, brownies, and… is there even anything else? There is something magical about the combination of chocolate and peanut butter and something even more magical when you can have it guilt free! These brownies are gluten free, dairy free, egg free, refined sugar free, high protein and fibre, vegan AND still taste amazing! Hard to believe right?!

Chocolate Peanut Butter Brownies

Brownie layer:

  • 1 15-oz can black beans, drained and rinsed very well
  • 2 tbsp cocoa or cacao powder
  • 1/2 scoop (20g) chocolate whey protein powder
  • 1/4 cup quinoa flour (or oat flour)
  • 1/2 cup pure maple syrup
  • 1/4 cup coconut oil
  • 2 tsp pure vanilla extract
  • 1/2 tsp baking powder
  • 1/3 cup chocolate chips

Peanut butter layer:

  • 1/2 cup peanut butter
  • 1/4 cup unsweetened almond milk (or milk of choice)
  • 1 tbsp pure maple syrup

Chocolate layer:

  • 2 tbsp cocoa or cacao powder
  • 1/2 tbsp pure maple syrup
  • 2 tbsp melted coconut oil

  1. Preheat oven to 350 F
  2. Combine all brownie ingredients except chocolate chips in a food processor and blend until completely smooth. You may have to scrap down the sides a few times but make sure it is really smooth
  3. Stir in chocolate chips
  4. Pour into a greased 8x8 pan and cook for 15-17 mins
  5. Let cool and then place in the fridge for at least an hour before you make the peanut butter layer
  6. Stir all peanut butter ingredients together until smooth and spread evenly over the brownies. Place the brownies back in the fridge while you make the chocolate layer
  7. Stir together chocolate layer all ingredients until a thin sauce forms and spread evenly over the brownies, then immediately put back in the fridge to harden the coating.
