Chocolate Chip Pumpkin Bars

Ingredients: 

  • 200g oat flour (around 1 3/4 cups)* 
  • 1/2 tsp salt
  • 1 tsp baking powder
  • 1/2 tsp pumpkin pie spice
  • 3/4 cup chocolate chips
  • 1/2 cup melted coconut oil
  • 1/2 cup pure pumpkin purée
  • 1/2 cup pure maple syrup
  • 2 tsp pure vanilla extract

*Note: you can put rolled oats in a food processor and grind them to make oatflour

Instructions: 

  1. Preheat the oven to 325 degrees and line the bottom of an 8x8 pan with parchment paper
  2. In a large mixing bowl, stir together the first 5 ingredients
  3. In a separate bowl, whisk all remaining ingredients
  4. Pour wet over dry, and stir to form a batter
  5. Spoon batter into the prepared pan and even out 
  6. Bake for 25 minutes. They will still look undercooked when you take them out but they continue to cook as they cool 
  7. Let cool for at least 30 minutes before cutting into squares. The longer you leave them the easier it will be to cut as they can be a little crumbly (I left mine overnight)
  8. Cut into squares and enjoy!
